For the class I took, Principles of Integrated Engineering aka PIE, the final project involved getting a budget and a team, and making any project you wanted as long as it had electrical, software and mechanical components.  Our team decided to make a flywheel for energy storage, and though we didn't store a whole bunch of energy, we did learn a lot along the way.  Check out the project website for more details, but after the project concluded, we continued to work on it a bit reaching a top speed of 12,000 rpm before being limited by power.
